Decaf is not lesser coffee. It's just typically made from lesser coffee.
For decades decaf was made from the lots nobody else wanted, because why spend good green on something you are about to strip. That is the entire reason it earned its reputation, and it is a sourcing decision, not a law of physics.

Most decaf on a supermarket shelf is made with methylene chloride or ethyl acetate. If you have started reading labels more carefully than you used to, that is probably the sentence you came here for.
Heist uses the water process. Green coffee is soaked, the caffeine moves out into the water, and the water passes through a carbon filter that catches caffeine and leaves the flavor behind. Nothing is added at any point.
