Decaf has been an apology for fifty years. It was never the coffee's fault.
Decaf tastes bad because of which beans go into it, not because the caffeine came out. Buy the grade of coffee that goes into a high-end single origin, take the caffeine out with water instead of solvent, and you get a cup you would drink at 9am that happens to be safe at 9pm. That is the entire idea.

Decaf earned its reputation honestly. Nobody went back and updated it.
For most of the last fifty years, decaf was made from the lots nobody else wanted. The logic was simple and, from a roaster's point of view, reasonable: why spend good green coffee on something you are about to strip and that nobody orders twice?
So the worst beans got the harshest treatment, and a whole category learned to taste like a compromise. Every stale, flat, faintly chemical cup you have had confirmed it.
That is a sourcing decision. It is not a law of physics, and it is not what decaffeination does to coffee. It just never got challenged, because the people who could taste the difference had already stopped ordering it.

There are two ways to take caffeine out. One of them is a solvent.
Most decaf on a supermarket shelf is made with methylene chloride or ethyl acetate. The residue left behind is regulated and small. It is still a solvent, and if you have started reading labels more carefully than you used to, that is probably the sentence that brought you here.
The other way is water. Green coffee is soaked, the caffeine moves out into the water, and the water passes through a carbon filter that catches caffeine molecules and lets the flavor compounds through. The flavor goes back into the beans. Nothing is added at any point.
It costs more and it takes longer, which is the only reason it is not the default.

What is actually left in the cup.
No decaf anywhere is caffeine free, and anyone who tells you otherwise is selling something. The standard is 99.9% of the caffeine removed from the bean. Heist comes out at 99.99%.
In the cup that lands at roughly 0 to 3mg, against 150 to 200mg for the caffeinated version of the same coffee. That is under a square of dark chocolate, and some lots come back from the lab as non-detect.
We would rather give you the real number than a comfortable one.

The test almost nobody runs.
Green coffee sits in humid warehouses and crosses oceans in shipping containers. Mold is common, and the mycotoxins that come with it are not something roasting reliably removes.
Almost nobody tests for it, because almost nobody is asked. We put every lot through a third-party lab, which is the kind of thing you only bother with if you expect someone to check.

Taste is the whole argument. Here is how it was won.
A coffee you drink out of obligation is a coffee you quietly stop drinking. None of the process matters if the cup is not worth having.
Getting there meant inverting the category at every step. Buy green coffee at the grade a specialty roaster buys for a caffeinated single origin, not the leftovers. Decaffeinate last, with water, so the flavor has somewhere to go back into. Roast in small batches to order instead of to a warehouse. Then send the lot out to be scored by people with no reason to be kind about it.
Coffee Review gave our Blueprint roast 93 points in 2026, on their own 100-point scale. Smooth Talker comes off the same sourcing standard and the same water process. Colombia and Ethiopia, Caturra and Guji, dark chocolate and vanilla bean.
None of that is clever. It is just slower and more expensive, and it is the part the category skips. The long version is our story.

I cannot believe this is decaf. It's one of the best coffees I've ever had.
